Tilapia Taco Tuesday

Hi loves!

Ok so whose ready for the Tilapia Taco Tuesday recipe ! I know I am! This recipe is oh so easy , delicious with a quick clean up!

I always buy my fish from Stew Leonard’s I find it to be super fresh. I get a pound that’s enough for 2-3 people.

Ingredients :

1 lb. of tilapia

Salt to taste

Pepper to taste

Chili powder to taste

Garlic powder to taste

A splash of cayenne pepper

Juice of one lime

Olive oil to cover the fish

Non stick cooking spray.

Tortillas for serving

Guacamole for serving

Onions and tomatoes

Lettuce

Optional :

Cheese and sour cream ( my husband is partial to these I try avoid dairy )

So, the first thing I do is preheat the oven to 400

Then I get a baking pan or sheet and I lay aluminum foil to fully cover it to allow for easy clean up.

Next I spray it with non stick cooking spray I do olive oil spray.

I take the fish out of the package and pat it dry with a paper towel to take out excess moisture this allows the fish to get a healthy crispy crust!

Then I pour a little olive oil onto the fish to fully massage and rub it in.

After I take the juice from a lime ! I only use fresh lime juice and massage it in !

Then I generously sprinkle it with salt and pepper.

After I mix all of the other spices in a bowl and spoon it to cover the fish and massage it in.

I put the fish in a preheated oven at 400 degrees where it bakes for 25 minutes !

*Note- while the fish is baking I wrap all of the tortillas in aluminum foil tightly and allow them to warm and soften while the fish bakes for serving.

Tip! I seal the foil as we take out tortillas to keep them warm.

I break the fish up with a fork and fill the tacos and put whatever toppings you like!
